A new icon of Kagurazaka, born in 2023

When you want to relax a bit, how about some French prosciutto and champagne? Just a minute away from Kagurazaka Station stands the symbolic Akagi Shrine. Walk just one minute down the street, and you’ll find ‘MAISON T,’ a charcuterie specialty store that was born in June 2023. Even before its opening, locals have been lining up, turning it into an icon of the town. This shop specializes in items like prosciutto, salami, pâté, and more. It is brought to you by TORISHIN, a chicken wholesale company with a history of around 130 years, mainly operating in Tokyo’s Itabashi.

Established French Prosciutto Brands

When you enter the shop, the first thing that catches your eye is the large prosciutto. Various brands of prosciutto are displayed, such as PIERRE OTEIZA, for example. The annual production of PIERRE OTEIZA is 7,000 heads, featuring the highly rare Basque pig. In 1929, there were 138,000 Basque pigs, but by 1981, the number had drastically decreased to about 20 female pigs and only 2 male pigs, putting them on the brink of extinction. Mr. Oteiza brought them back to the Basque region, and with the cooperation of the national breeding program, he successfully revived the breed. These pigs roam the Pyrenees mountains, freely grazing on chestnuts and acorns, growing stress-free in the natural environment. Another French brand, Maison Laborie, is a well-established company celebrating its 90th anniversary. Upholding recipes passed down through generations, Maison Laborie creates its products through the traditional process of “salting.” It distinguishes itself by avoiding the use of nitrates and chemical additives. The prosciutto is exposed to the gentle winds of the Auvergne mountains, allowing it to mature slowly. The process is thorough, utilizing 100% natural worm repellents and avoiding the use of antibiotics.
 

Enjoy the Freshly Sliced Deliciousness at Home and in the Shop

The prosciutto is available for purchase by weight and can be sliced in front of you. I bought both of these brands. They both had a fragrance with no unpleasant odor. They were so deliciously mild and salty that we couldn’t resist devouring them. Next time, I definitely want to enjoy them at the place itself. For dining in, they offer sliced prosciutto, quiche, baguette sandwiches, and more. Of course, you can also buy these items separately.
